Ingredients for croutons for Caesar salad:
2 tablespoons of melted butter
1 tablespoon of extra virgin olive oil
Bread cubes without crust
2 teaspoons of salt
1/4 teaspoon ground cayenne pepper
1/2 teaspoon ground black pepper
Ingredients for Caesar salad:
2 cloves of garlic
4 anchovy fillets (optional)
1 teaspoon of salt
1 teaspoon of freshly ground paprika
1 tablespoon of freshly squeezed lemon juice
1 teaspoon Worcestershire sauce (optional)
1/2 teaspoon Dijon mustard
1 large yolk
1/2 cup extra virgin olive oil
500 g of lettuce (outer leaves discarded, inner leaves washed and dried)
100 g of freshly grated parmesan cheese
Preparation:
Heat the oven to 220 degrees. Mix butter and olive oil in a large bowl. Add the bread cubes and mix well. Sprinkle with salt, cayenne pepper and black pepper; mix well again. Spread the bread in one layer on a baking sheet. Bake until the croutons are golden, about 10 minutes. Put it aside.
In a wooden salad bowl, put chopped garlic and chopped anchovies, if you are using them, and salt. Then, using a fork, shred them further and add pepper, lemon juice, Worcestershire sauce, mustard and egg yolk. Stir and add olive oil.
Chop the lettuce leaves into pieces of one to three centimeters. Add croutons, salad and cheese to the bowl and mix well. If you want, grate extra cheese on top of the salad before serving.
If desired, add cherry tomatoes, chopped chicken, onions or other ingredients you like.
