Ingredients
Graham/Oat Cortex:

ยฐ1โ„4 cup of brown sugar

ยฐ1 cup cracker crumbs graham

ยฐ3โ„4 cup rolled oats

ยฐ1โ„2 Melted Butter Cup

Cheesecake:

ยฐ2 8 ounces of soft cream cheese

ยฐ2 tbsp corn starch

ยฐ1โ„4 cup of brown sugar

ยฐ1โ„4 White Sugar Cup

ยฐ1โ„8 teaspoon ginger

ยฐ2 teaspoons vanilla extract

ยฐ1โ„2 teaspoon cinnamon

+Apple Crisp Topping:

ยฐ1โ„4 cup of flour for all purposes

ยฐ1โ„4 cup rolled oats

ยฐ1โ„4 cup of brown sugar

ยฐ1โ„2 teaspoon cinnamon

ยฐ2 tbsp coconut oil

ยฐ2 medium to large apple, peeled and thinly sliced

ยฐTop caramel, if you wish

 

* Methods

Preheat oven to 350F.

In the mixing bowl, mix Graham cracker crumbs, cabbage oats, melted butter and brown sugar together.

Press inside the bottom of the springform pan 9 or 10 inches.

Bake for 5 minutes. Remove from the oven to cool.

Meanwhile, in an electric mixer bowl, mix the cream cheese, brown sugar, white sugar, cinnamon, ginger, cornstarch and vanilla.

Once well combined, pour over the cracking/oatmeal crust of Graham.

To start your apple layer, arrange thin apple slices over the cheesecake in one layer.

Top with Apple Crisp Topping. Bake at 350F for 40-50 minutes.

Once cooking is finished, cool for 15 minutes, then refrigerate overnight
