Ingredients
Dough:
- 600 g of soft flour,
- 8 g of dry yeast,
- 1 teaspoon of sugar,
- 2 teaspoons of salt,
- 1 egg,
- 150 ml of oil,
- 1-2 dl of warm water
- 2 dl of warm milk
Stuffing I:
- 300 g of ground beef,
- 1 head of red onion,
- 2-3 cloves of garlic,
- salt, pepper,
- about 9 spoons of tomato sauce
- 150 g of cheese
Stuffing II:
- 200 g of fresh Swiss chard or spinach,
- 250 g of small cow’s cheese,
- 2 spoons of sour cream,
- 2 eggs,
- salt,
- 2 cloves of garlic,
- 150 g of cheese
Also required:
- 1 egg yolk
- 1 tablespoon of yogurt for coating
- sesame
Directions
- Dough:
- In a plastic container, add yeast and sugar to the flour in the middle, and add salt around the edge of the flour. Add warm milk, water, egg and oil and knead a softer dough. Cover the bowl with plastic film or a cloth and after 20 minutes knead the dough on the work surface, if necessary add a little flour and knead for about 5 minutes. Form a smooth ball, return to the container and leave to rise for about 1 hour.
- Stuffing I:
- Heat the oil in a wide pan and add chopped onion. Add minced meat and stew. Salt and pepper to taste. At the end, add the tomato sauce and, if necessary, season with the desired spices and simmer a little longer. You can add some vegetables to this stuffing if you like.
- Stuffing II:
- Wash fresh Swiss chard or spinach leaves and cut off the excess. Finely chop the leaves and transfer them to a suitable bowl, in which we add the cheese, sour cream, eggs, squeeze the garlic and add salt to taste. Mix everything and the filling is ready.
- Divide the resulting dough into 8 balls and leave them to rest for another 10 minutes. Prepare a large oven tray 42×32 cm, line it with baking paper.
- Roll each ball into an oval shape and apply part of the filling and sprinkle with crumbled mozzarella cheese. Leave about 2 cm from the outer edges of the dough unfilled, because we will transfer that part over the filling to form a “boat” shape. Connect the ends well and twist.
- 4 pieces fit in one baking sheet, so you will need 2 baking sheets.
- Before baking, leave them covered to rest for about 15 minutes, then brush them with beaten egg yolk with a little yogurt and sprinkle with sesame seeds.
- Bake them in an oven that has been heated to 250°C, and as soon as you place the tray, reduce the temperature to 220°C and bake for about 17 minutes or until golden brown (adjust the baking time and temperature to your oven). Cover the baked pie with a cloth, let it cool down for about 10 minutes, and it’s ready to eat.
