Cinnamon Rolls

Ingredients:

For the dough:

  • 3/4 cup warm milk,
  • 2 ¼ tablespoons yeast,
  • 1/4 cup sugar,
  • 1 egg plus
  • 1 egg yolk at room temperature,
  • 1/4 cup melted butter,
  • 3 cups flour,
  • 3/4 teaspoon salt.

For the filling:

  • 2/3 cup brown sugar,
  • 1½ tablespoons ground cinnamon,
  • 1/4 cup softened butter

For the cream cheese frosting:

  • 100 grams of softened cream cheese,
  • 3 tablespoons of softened butter,
  • 3/4 cup of powdered sugar,
  • half a teaspoon of vanilla extract.

Preparation:

Warm the milk and sprinkle the yeast on top. Add sugar, egg, yolk and melted butter. Mix with a mixer until well combined. Then mix in the flour and salt with a wooden spoon until the dough starts to form.

Mix the dough with a mixer at medium speed, it should form into a nice ball and be a little sticky. If you don’t want to use an electric mixer, you can knead the dough with your hands for 8-10 minutes on a well-floured surface.

Transfer the ball of dough to a well-oiled bowl, cover with plastic wrap and a warm cloth. Let rise for 1 hour or until doubled.

After the dough has doubled in size, transfer it to a well-floured surface and roll it into a rectangle. Spread the softened butter on the dough, skipping the edges on the far side of the dough.

In a small bowl, combine the brown sugar and cinnamon. Using your hands, spread the mixture over the coated butter, then rub the brown sugar mixture into the butter.

Roll the dough tightly, making sure to bring the edges together as best you can. Cut into 2.5cm sections with a serrated knife. You should get 9 large pieces.

Place the cinnamon rolls in a greased baking tray, cover with plastic wrap and a warm cloth and leave to rise for another 30-45 minutes.

Preheat the oven to 180 degrees Celsius. Remove the plastic wrap and cloth and bake the cinnamon rolls for 20-25 minutes or until they are just lightly browned on the edges.

For the frosting, combine cream cheese, butter, powdered sugar and vanilla extract in a bowl, mix until smooth and fluffy. Spread on the rolls and serve immediately.
