Cajun Shrimp and Sausage Pasta

INGREDIENTS

ยฐ1 pound peeled and deveined shrimp (medium is best)

ยฐ3 minced garlic cloves

ยฐ8 ounces of uncooked penne pasta or your favorite pasta shapes

ยฐ2 tablespoons oil (from the jar of sun-dried tomatoes)

ยฐยผ tsp salt

+For the sauce:

ยฐ1 cup cook cream

ยฐ4 ounces sun-dried tomatoes, drained and chopped

ยฐยฝ cup water

ยฐ1 cup mozzarella

ยฐ2 cloves garlic, minced, or more if desired

ยฐยผ tsp salt

ยฐ1/8 teaspoon ground paprika

ยฐSmall of fresh basil leaves or 1 tsp dried basil

ยฐยผ tsp red pepper flakes (optional)

DIRECTIONS

Cooking pasta in boiled water to tender.

Drain the pasta, keeping half of the cooking water.

Meanwhile, you can heat the oil (from the jar of dried tomatoes) in a large frying pan.

Add garlic and cook for 30 seconds.

Add prawns and salt and sautรฉ until the prawns are cooked.

Remove the shrimp to a bowl.

Lower the heat a little.

Add garlic and sun-dried tomatoes to make the sauce.

Cook for 2 minutes.

Stir in reserved pasta cooking liquid, cheese, cream, paprika, and salt.

If using dried basil, add it now.

Continue to cook and stir until it begins to thicken.

Now incorporate the prawns into the sauce as well as the pasta.

If using fresh basil, add it now.

Grind a few red pepper flakes on top before serving if desired.
