Chinese roasted duck

Ingredients:

For the marinade:

  • 1 whole duck (about 4-5 pounds)
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons Chinese cooking wine (Shaoxing wine)
  • 1 tablespoon honey
  • 1 teaspoon five-spice powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the glaze:

  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil

For serving:

  • Steamed pancakes or flour tortillas
  • Hoisin sauce
  • Sliced cucumbers
  • Green onions, thinly sliced

Preparation:

  1. Rinse the duck under cold water and pat it dry with paper towels. Remove any excess fat or feathers.
  2. In a small bowl, whisk together the soy sauce, hoisin sauce, Chinese cooking wine, honey, five-spice powder, salt, and black pepper to make the marinade.
  3. Place the duck in a large dish or zip-top bag and pour the marinade over it. Make sure the duck is evenly coated with the marinade. Cover the dish or seal the bag and marinate in the refrigerator for at least 4 hours, or overnight for best results.
  4. Preheat your oven to 375°F (190°C).
  5. Remove the marinated duck from the refrigerator and let it come to room temperature for about 30 minutes.
  6. Place the duck on a wire rack set over a baking sheet, breast side up. This allows the duck to cook evenly and allows the fat to drip away.
  7. Roast the duck in the preheated oven for about 1 hour and 30 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  8. While the duck is roasting, prepare the glaze by combining honey, soy sauce, hoisin sauce, and sesame oil in a small bowl. Mix well.
  9. After the duck has roasted for about 1 hour, brush the glaze all over the duck. Return it to the oven and continue roasting for another 30 minutes, or until the skin is deeply browned and crispy.
  10. Remove the roasted duck from the oven and let it rest for about 10 minutes before carving.
  11. Carve the duck into serving pieces, such as legs, wings, and breast meat.
  12. Serve the Chinese roasted duck with steamed pancakes or flour tortillas. Spread hoisin sauce on the pancakes or tortillas, add slices of roasted duck, and top with sliced cucumbers and green onions.
  13. Roll up the pancakes or tortillas and enjoy the flavorful and crispy Chinese roasted duck.
