Veggie Balls

Ingredients

  • 600 g of zucchini
  • 200 g of carrots
  • 200 g of potatoes
  • 100 g of red onion
  • 50 g of hot red pepper, fresh or pickled
  • 200 g of chopped greens
  • 150 g of full-fat Trappist cheese
  • 2 tablespoons of breadcrumbs
  • 2 eggs
  • little salt
  • a little ground pepper
  • 100 ml of olive oil
  • breadcrumbs to form meatballs

Directions

  • Peel the zucchini, carrot, potato and onion. After peeling grate vegetables in separate containers each. Salt the zucchini with 2 pinches of salt and let it stand for about 10 minutes. Salt the potatoes with 1 pinch of salt and let them stand for about 10 minutes to release their juices. Chop the hot pepper into small cubes. Chop the frozen chopped greens with a knife. Grate the cheese on a fine grater.
  • Place grated carrot, grated onion, chopped greens and chopped hot pepper in a large bowl. Approach the juicing of grated zucchini and potatoes. First, drain the grated zucchini well through the palms of your hands and place the drained zucchini in a separate container, and repeat the same procedure with the potatoes. In order to squeeze out the excess water well, repeat the process once more with the zucchini and potatoes and add the well-squeezed zucchini and potatoes to the other ingredients in the bowl. Add grated cheese and ground pepper and mix the mixture well. Try a little milk and add salt if it is not salty enough.
  • Add 2 eggs and 2 spoons of breadcrumbs and mix well. Start making meatballs. Put a little breadcrumbs on the palm of your hand and put about 2 spoons of mixture on the breadcrumbs, sprinkle with a little breadcrumbs and form a meatball between your palms and put it on a flat plate.
  • Heat the olive oil in the pan and place the meatballs side by side in the hot oil with a spatula. Fry the meatballs at a medium temperature first on one side, then when it gets a nice yellow color (about 3-5 minutes) turn the meatballs with a spatula to fry them on the other side as well. Place the fried meatballs on a serving plate. Meatballs can be served warm with roasted potatoes, and they are extremely good cold.
